Product: Thawed fresh chili. This is a significant challenge as thawed chili has a very high water content and a softer texture, requiring a delicate drying process to avoid damage or deformation.
Scale: Drying within a 40-foot container (40F), a flexible and cost-effective solution that saves on factory construction investment and suits modern agricultural production models.
Technical Specifications:
Drying Temperature: A stable 70°C. This high temperature requires equipment with the capabilities of a heat-resistant dehumidifier that can provide consistent and continuous heat.
Final Moisture Content: To achieve 10-13%. This is the "golden ratio" for long-term preservation, preventing mold while maintaining a certain pliability to meet export standards.
Drying Time: To complete a batch within approximately 30-32 hours, ensuring productivity and economic efficiency.
The greatest challenge was not just moisture removal, but ensuring the chili dried uniformly from the inside out, retained its vibrant natural red color (without darkening from excessive heat), and preserved its characteristic spicy flavor.
