A dedicated enterprise in Ca Mau, aiming to introduce its specialty soft-dried bananas to international consumers, decided to invest in a modern drying system and entrusted DeAir as their implementation partner.

The Challenge from Ca Mau's Banana Hub: Large Output, High Standards

The client presented DeAir with a specific industrial-scale problem, requiring a solution that was both efficient and capable of ensuring the highest quality for the final product:

  • Drying System: Installation of 02 specialized drying rooms.
  • Room Scale: Each room with an area of 32m² and a height of 3.0m.
  • Drying Capacity:
    • Fresh banana input weight: 2000kg/batch.
    • Soft-dried banana output weight: 500kg/batch (a 4:1 drying ratio).
  • Technical Requirements:
    • Drying time: Fast completion within 16 hours/batch.
    • Drying temperature: Stably maintained between 60-65°C.

The core objective was to completely resolve the food safety issues associated with traditional sun-drying methods, while creating a soft-dried banana product with stable quality and beautiful color, competitive enough for demanding export markets.

With extensive experience in drying food and agricultural products, DeAir advised and implemented a system of 02 drying rooms using the Daxwell industrial heat-pump dryer. This is considered the optimal solution for soft-dried products that need to retain their flavor, color, and soft texture.

This process helps the moisture in the bananas to evaporate slowly, allowing the natural sugars to concentrate, creating a soft, chewy texture and a rich sweetness without making the bananas hard.
  2. Attractive Product Color: Precise control over temperature and airflow helps the dried bananas achieve a beautiful, appealing honey-brown color, avoiding the darkening that can occur with excessive heat.
