Upgrading the Process, Aiming for Export Quality

The client's objective was to completely replace manual drying methods and establish a closed, tightly controlled process to ensure the following criteria:

  • Product Quality: The rice crackers after drying must achieve the ideal crispy and porous texture, without being hard, scorched, and while maintaining an attractive golden color.
  • Hygiene and Safety: The drying process in a sealed room must absolutely guarantee food safety standards, unaffected by dust, insects, or other environmental contaminants.
  • Precise Drying Parameters:
    • Quantity: 03 drying rooms operating in sync.
    • Drying Temperature: Stably maintained at 40°C. This low temperature helps to dry the crackers slowly, creating a crispy and porous texture.
    • Room Humidity: Controlled at 40%RH.
    • Drying Time: A batch completed within 24 - 36 hours.
