Sugar (Sucrose) is an extremely hygroscopic material. Scientific research shows that when sugar crystals (especially hot ones) are exposed to humid air, their surface becomes moist, leading to adhesion and the formation of "solid bridges" as they dry again. This is the "caking" phenomenon, which reduces the quality of the final product and clogs the sieving and packaging systems.
